PREP TIME 2.5 HOURS Ingredients Fiesta Chicken Serves 6 people COOL CORN SALSA 1 cup 1 1/2 cup 1/2 cup 3 Tbsp. 1 Tbsp. 1 tsp. 1/4 tsp. diced avocado can of kernel corn, drained (7 oz.) diced English cucumber (with peel) diced tomato thinly sliced green onion lime juice granulated sugar salt FIESTA CHICKEN MARINADE 1. Cool Corn Salsa Combine all 8 ingredients in medium bowl. Chill. 1/2 cup sour cream 1 envelope of taco seasoning mix (1 1/4 oz.) 1 Tbsp. lime juice 6 boneless, skinless chicken breast halves (about 4 oz. each) 2. Fiesta Chicken Marinade Combine the first 3 ingredients in small bowl. 3. Place chicken in large resealable freezer bag. Pour marinade over top. Seal bag. Turn until coated. Marinate in refrigerator for and salsa 2 hours, turning occasionally. 4. Remove chicken Discard any remaining sour cream mixture. Preheat barbecue to medium. Place chicken on greased grill. Close lid. Cook for about 8 minutes per side until internal temperature reaches 170°F (77°C). Serve with Cool Corn Salsa. Fresh and fun!
