PREP TIME Ingredients 30 MINUTES 4 large, ripe, firm pears 1 tbsp. lemon juice 2 cinnamon sticks, broken in half 2 tbsp. agave syrup 1/3 cup apple juice 1/2 vanilla bean 1 cup vanilla greek yogurt 2 tbsp chopped pear 2 tbsp. chopped walnuts, toasted cooking spray baked breakfast pears 1. Preheat oven to 350°F (175°C). Spray 9 x 13 inch (23 x 33 cm) baking dish with cooking spray. Halve pears and core, removing a 1 inch (2.5 cm) deep scoop. Brush halves with lemon juice. 2. Combine next THREE ingredients in small bowl. Cut vanilla bean in half and scrape seeds into baking dish. Arrange pears, cut side up, in single layer in dish. Bake for 40 to 45 minutes, basting pears with apple juice mixture a few times, until pears are tender. Remove from oven and allow to cool completely. Cover and chill for at least 6 hours or overnight, turning pears in liquid at least twice during chilling time. 3. To serve, combine yogurt and apples. Spoon mixture into pear halves and sprinkle with walnuts. This elegant dish is deceptively easy to prepare and is a welcome break from standard breakfast fare.
