1 tbsp. fish sauce
2 tsp.
thai red curry
paste

garlic cloves,
minced
1/4 tsp. salt
1/2 tsp. pepper
3/4 lb. haddock fillets,
coarsely
chopped
1/2 cup panko crumbs
1/2 cup panko crumbs
1 cup
cooking oil
1. Process first 7 ingredients
in a blender or food processor until just
combined.
2. Add fish and process until
coarsely ground. Transfer to a medium
bowl, add panko crumbs and mix well.
Form into 1 inch (2.5 cm) balls and
flatten into patties.

3. Press patties into panko
crumbs until coated. Heat cooking oil
in a large frying pan on medium-high.
Shallow-fry patties in 2 batches for 1 to 2
minutes per side until browned. Transfer
to paper towels to drain.
