Chicken Chili 1 skinless chicken breast roasted and shredded 2 Pablano peppers roasted and chopped 2 tablespoons olive oil 1 large onion , chopped 1 cup chicken broth 1 16 oz . can cannellini beans 1 cup frozen shoe peg corn 1 teaspoon garlic powder 2 cloves garlic , minced 1 tablespoon ground cumin ½ teaspoon oregano 1 / 8 teaspoon ground cayenne pepper
Heat oil in pan . Saute onions for 4 to 5 minutes . Add garlic and cook 2 more minutes or until onions begin to brown . Combine all ingredients into crock pot and cook on low setting 3-4 hours . Serve in soup bowls topped with a spoon of sour cream , Monterey jack cheese and crushed tortilla chips .
