Chicken Chili 1 skinless chicken breast roasted and shredded 2 Pablano peppers roasted and chopped 2 tablespoons olive oil 1 large onion, chopped 1 cup chicken broth 1 16 oz. can cannellini beans 1 cup frozen shoe peg corn 1 teaspoon garlic powder 2 cloves garlic, minced 1 tablespoon ground cumin ½ teaspoon oregano 1 / 8 teaspoon ground cayenne pepper
Heat oil in pan. Saute onions for 4 to 5 minutes. Add garlic and cook 2 more minutes or until onions begin to brown. Combine all ingredients into crock pot and cook on low setting 3-4 hours. Serve in soup bowls topped with a spoon of sour cream, Monterey jack cheese and crushed tortilla chips.
