NEWPORT BEACH COUNTRY CLUB GRANOLA BARS
Serving : 16-20 bars
8 cups Muesli ( I like Bob ’ s Red Mill organic ) 1 / 2 cup pumpkin seeds 1 / 2 cup hemp hearts 1 / 2 cup ground flax 1 cup honey 3 cup almond butter 1 / 2 cup agave 1 tsp salt 1 tsp pure vanilla extract
Method Pulse 1 cup of the Muesli in a food
processor and mix back into all the combined dry ingredients . Heat the honey , almond butter , agave , salt until heated thru , add vanilla ( be careful not to scorch as it turns quickly ) Pour hot mixture into dry , mix well until incorporated . Mixture should be cohesive . Transfer to a parchment lined pan , press into corners until flat . Refrigerate for at least 3 hours before cutting into squares .
