What does this mean for the Inland Northwest Culinary Academy?
As a culinary institution, INCA strives to anticipate industry trends and to prepare its students for the vast and ever changing culinary world. As a restaurant, Orlando’ s prides itself on offering only the highest quality and freshest ingredients. At INCA, through the theory and lab classes, our chef instructors ensure their students know where they get their food. From pigs and chickens bought from Rocky Ridge Ranch, to sunchokes and squash purchased through Linc Foods, students are taught about the background of the food as well as how to care for it in its preparation.
Rocky Ridge Ranch
Rocky Ridge is a family operated ranch located 30 miles west of Spokane. They offer a variety of meats that are grass fed and pastured. The animals they raise are never fed chemicals or growth stimulants such as hormones or steroids. Rocky Ridge also offers sustainable and organic fresh produce and they participate in Community Supported Agriculture( CSA). They offer three 12-week CSA programs during the Spring, Summer, and Fall where you can get to know and support your local farmer as well as see how your food is grown.
