Linc Foods
Linc Foods is a worker and farmer owned cooperative in Washington State.
They sell locally produced fruits, vegetables, grains, meats, cheeses, and eggs to restaurants, universities, grocery stores, and more. The farmers involved in Linc foods do not use pesticides or chemical fertilizers to ensure that their produce is safe and healthy.

In the Kitchen There is a tremendous amount of work put into each plate at Orlando’ s because everything is made from scratch. Because the dishes are so labor intensive, the students proudly take ownership of the plates they produce. We take command of a dish, research it, create and build it all to bring joy to others.
If you have been following our series, you have read in“ The Naked Plate” about how important it is to build a beautiful and delicious final product. In order to achieve this masterpiece on a plate, we are taught to respect food while we are working with it. When butchering animals, we are taught not only the steps of the butchery, but also techniques for holding your knife and how to make smooth cuts in order to end up with little waste and a visually appealing final product. We practice peeling, chopping, slicing,
dicing, and tournéeing vegetables so they are uniform is size and shape, and cook evenly. We learn how to sear meats and use the resulting fond( base) to incorporate complementary and beautiful flavors. In short, we learn how to coax the best textures, flavors, and colors out of the ingredients that we use.
