FENNEL AND APPLE SLAW

This simple , fresh and punchy salad is possibly the perfect spring side dish for grilled or barbequed meat , fish or chicken .
Serves : 4
INGREDIENTS
} 1 fennel bulb } ¼ head Chinese cabbage } 1 apple } 2 sprigs of fennel leaves , chopped } 50g feta cheese } 30g walnuts , crushed
Dressing : } 1 lemon , juiced } 2 tbsp of extra virgin olive oil } Salt and pepper , to season
METHOD
1 . Thinly slice cabbage , fennel bulbs & apple and add to a salad bowl . If you have a mandolin this will help give you a very fine slice .
2 . To make dressing , combine ingredients in a bowl and whisk together well to combine and form a vinaigrette . Add to salad and toss to combine .
3 . Serve topped with chopped fennel leaves , crumbled feta and crushed walnuts .

MEDITERRANEAN ROASTED FENNEL

Abbey shows us how easily you can transform fennel from crisp and crunchy to earthy and luxurious with these classic Mediterranean flavours .
Serves : 4
INGREDIENTS
} 2 fennel bulbs , cut into quarters } 250g cocktail truss tomatoes or
1 punnet cherry tomatoes } 1 tbsp capers } 2 sprigs of thyme leaves } 2 garlic cloves } 2 tbsp extra virgin olive oil } Salt and pepper to season
METHOD
1 . Preheat oven to 200 ° C . In a baking tray add chopped fennel , whole garlic cloves , tomatoes , capers and thyme leaves . Drizzle with olive oil and season with salt & pepper .
2 . Bake for 40-45 minutes until fennel is tender and golden .
3 . Serve alongside your favourite protein , this is delicious alongside baked white fish .
