MIDSUMMER BBQ AT BURNT TRUFFLE In May, Chef owner, Gary Usher, launched a record-breaking £200k Kickstarter campaign to open a 100-cover restaurant in Liverpool city centre, with a series of chefs offering to host guest chef nights to help raise the target. I, like a great many of our readers put my hand in my pocket to bid on several events and do our bit to help ensure a great guy can BBQ at Usher’s Heswall based restaurant, Burnt Truffle, hosted by some of the UK’s top Chefs, including Michelin-starred Chef Patron of Midsummer House, Daniel Clifford, Executive Chef of The Wild Rabbit, Tim Allen, Chef Owner of Alimentum and The White Horse, Mark Poynton, Collette’s at the Grove’s Head Chef, Russel Bateman, Head Chef of Midsummer House, Mark Abbott and Pike & Pine’s Matt Gillan. So, there we all were stood outside in the rain on August 20th tucking in to sugar pit cured pork ribs, honey and mustard glazed pork neck, charred scallions, charred cauliflower, and barbecue spiced sweetcorn, and washing the whole lot down with copious amounts of beer and Prosecco. Despite the typically British weather, we all had a great time and partied well into the night, and I was really pleased to able to meet many of you and share our love of food. I will hopefully see you all again at the next event, but until then I will leave you with a few words from Gary Usher himself: “I feel so humbled that Daniel made this happen and want to thank all the chefs and their teams for a truly unforgettable evening.” 94 wirrallife.com
