CHRISTMAS DINNER LEFTOVERS
One of the best things about Christmas for me is unsurprisingly food ! Of course the big Christmas dinner is the star of the show and I think this year it ' s more important than ever to connect with your nearest and dearest and enjoy the most important meal of the year .
YORKSHIRE PUDDING WRAPS This is a super easy one . All the hard work is done for you already . I use a tried and tested method of getting consistently good Yorkshires . I use equal quantities flour , egg and milk .
I will let you in on a little secret of mine though . What I look forward to the most is the boxing day leftovers . The pressure to produce a well cooked , well presented meal with all the trimmings is off . Boxing day is a lot more relaxed . The kids are keeping themselves busy so my main concern is finding something good to watch on the telly and plan what food I ' m going to graze on throughout the day . This is probably the reason I put on about two stone over the four days we have off at this time of year at Muffs .
I always make sure I have plenty of leftovers for my favourite , bubble and squeak ! To be fair its not the hardest dish to make and it certainly isn ’ t the prettiest but it never fails to hit the spot !
Talking to customers in the shop I think most people feel the same way . When planning the size of their Christmas meat almost all people say how many people they are feeding and oh we need extra for the next couple of days !!
This got me thinking about what people like to do with their leftovers and I thought I could give you a couple of suggestions to mix things up a bit . Hopefully this will inspire you to use up all those little bits knocking around the fridge while using as little energy as possible . Remember the key to all these recipes is try not to work too hard , use and enjoy what ’ s at hand .
Method :
• Fill a large mug with plain flour and place in a mixing bowl then repeat the process with the egg and milk . Whisk until well combined . It ' s best if you can do this a few hours before and let the mixture rest in the fridge . You should allow at least 30 minutes though and make sure you don ’ t over beat the mixture .
• Pre heat your oven to 220 o c with a large metal frying pan or metal tray in the oven . When you are ready , place a good chunk of beef dripping or vegetable oil in the bottom of your pan and allow it to come up to temperature for a few minutes . Give your mixture a final stir with a touch of salt and pepper . Again it ' s important you don ’ t over mix as it will make the mix tough . Pour the mix into the hot pan and put into the oven . It should take about 20-30 minutes .
