restaurant serving lunch and dinner along with craft beers and baked loaves of bread is adding to the dining experiences that locals and out-of-town visitors alike find along Mercer Street in Princeton .
Owned by Ginger Conley and J . W . Groseclose , the Bōc-Hord Brewery and Bakehouse at 833 Mercer Street was born when they bought the Sophisticated Hound Brewing Company in May 2024 after the original owners decided to move on .
“ My partner , J . W ., is a brew master ,” Conley said soon after the

restaurant opened . “ He ’ s done a couple of other brewery projects and we just decided we wanted to do our own thing and this opportunity came up where Matt reached out to us to see if we wanted to purchase the Sophisticated Hound from him so we did .
“ So we purchased the brewery . It ’ s been quick . We ’ ve been in talks for a long time ,” Groseclose said .
There was a lot to get done to transform the former Sophisticated Hound into the Bōc-Hord Brewery and Bakehouse . The new menu is the

“ We came up with that idea because it has been inspired by him ( Groseclose ) and his journey teaching and educating himself . He ’ s got a bōc-hord of books he ’ s used to hone his craft .” |
