Using GL to sort the good, the bad and the suicidal 129 Here we rely on the fact that if we made a dash for the kitchen and tried to binge on the stuff, the chef would get his burliest kitchen hands to turf us out before we could eat too much. Because we can’ t afford a chef and burly kitchen hands we never eat this at home! Breakfast cereals illustrate our‘ Have breakfast like a Princess …’ analogy. Let us start by looking at the venerable old man of breakfast, Cornflakes. Cornflakes have a GL of 20, exceeding Froot Loops at 18, and only surpassed by Rice Bubbles at 22. So why is it that, at these GLs, people did not get fat eating Cornflakes or Rice Bubbles – staple diet in our family? My favorite, as I write this, is All-Bran Fruit’ n’ Oats which I had not tasted until I started to look at GL and experiment with new foods. Why do I eat something for breakfast with such a low GL if it doesn’ t matter so much? This is the reverse application of the principle behind the low sacrifice approach. Why eat something with a greater fat generating capacity when you are quite happy eating something with a low fat generating capacity? I want to save my fat generating high GL foods for the food I really love – which I will probably be having for morning tea. Some surprises come out of the GL tables like having low fat icecream( GL5) and strawberries( GL1) for dessert. Keep portion size down, i. e., one large scoop of ice-cream only, and watch the more-ish factor which might cause a return for more. You need to work your way through the GL table looking at each of the food groups to develop your own personalized diet of low sacrifice switches. As you do so keep the following pointers in mind:
• Certain manufactured or pre-prepared foods may have a low GL and high fat, e. g., pizza, ice-cream and dairy products. With these products the‘ low fat’ versions are the way to go. Remember GL is
