Using GL to sort the good, the bad and the suicidal 128 Sweet corn on the cob is another favorite in our house. Often on weekends, where lunch has been the main meal of the day, we will have a light evening meal comprised entirely of sweet corn, microwaved and smothered in butter, pepper and salt – and that will be it! Another light evening meal in our family will be mushrooms sautéed in garlic and butter with two pieces of Burgen Soy-Lin bread( GL 3). Note that while avocado has a GL of 0 it does contain fat – but like all fats from plants it is good for you. From looking at the GL table you can see why salads are so good for us with GLs of zip. Let’ s turn to fruit now. What’ s the first thing you notice as you cast your eyes down the list? Look at all the ticks – basically, it’ s all good news! It is only when we get to dried fruit that there is a problem. But notice dried apricots with a GL of 8 – our son eats them like there’ s about to be a worldwide shortage. Turn your attention now to the breads. Breads are the big winner when we look at GL as it creates a huge range in the low to moderate categories. There is such a huge range of styles and flavors that most people have little difficulty finding a bread with an acceptable GL that they still enjoy. Basically, white bread rolls are out but most of the specialty, multi-grain and fruit breads are fine for us. Just a note here though. You will notice that I have a cross beside breads like a Baguette( French stick) even though it only has a moderate GL of 15. While many breads have only moderate GLs, the reality is that for many people they have a high more-ish score; i. e., it is easy for your average bread fiend to eat lots more than just a couple of pieces. It is for this reason that I discourage people eating bread of GLs above 10 after lunch. After my wife and I came to understand GL, we settled on the just mentioned soy-lin bread as our standard fare, with fibre enriched white bread for our kids( GL 11). Mind you, when my wife and I go out to a restaurant for lunch, if they have some Turkish bread, good quality extra virgin olive oil and sea salt then we will knock ourselves out with a slice each.
