Grilled chicken breasts marinated in Greek seasoning. This is also excellent using pork and can be done on skewers.

• 3 tbsp Clubhouse Greek Seasoning
• 1 tbsp olive oil
• 5 tbsp water
• 6 chicken breasts( either whole or cut into cubes)
Preparation Instructions
Mix the marinate ingredients and toss the chicken in them. Let sit for 1 hour or overnight( the longer, the better). For full breasts, grill in broiler 7- 8 minutes per side( or using Foreman grill for 8 minutes). If using skewers, soak bamboo skewers for 1 / 2 hour before threading and grill for 6 minutes a side( 6 minutes total on a Foreman Grill).

• 500g( 1.1 lbs) minced chicken breast
• 2 egg whites
• 1 / 4 cup chopped coriander or other herbs
• 2 tbsp chopped parsley
• 1 / 2 cup skim milk
• 15g parmesan cheese, grated
• 2 tbsp olive oil
• pepper
Preparation Instructions
Mix potato, chicken, egg whites, herbs, cheese, milk, pepper in a bowl Form into palm-sized balls and roll in flour, flatten to 3 / 4 inch thick patties. Cook in oil in a hot pan, turning once.
