Endivias con queso de cabra y naranjas ( Endives with goat cheese , oranges , and almonds )
These adorable little endive boats are filled with orange pulp and crumbled goat cheese and topped with slivered almonds . While the endives themselves are naturally quite bitter , the sweet , juicy orange cuts through the bitterness . The goat cheese adds a creamy texture while the almonds give a nice crunch .
Not only are these pretty , but they ’ re also fun to eat . Each crisp cone is filled with a perfectly balanced blend of salty , creamy goat cheese and sweet , tangy tomato marmalade . I didn ’ t expect to like them as much as I did . But once I bit into my first little cone , I knew I ’ d be going back in for a second .
Croquetas de pollo ( Traditional chicken fritters )
Served on a Cinderella pillow , these croquettes are good enough to serve at a royal banquet . A perfectly crisp exterior surrounds tender morsels of chicken in a luscious roux . I was surprised to learn there was no cheese in this dish whatsoever ; that ’ s just how creamy the croquettes were thanks to the roux inside .
