Fish Tacos
Provided by Rachel Roy, Sitka Chamber
INGREDIENTS:
Fish
• 1 pound fish of your choice; cod, halibut, or salmon
• 2 teaspoons of olive oil
• 1-2 tablespoons taco seasoning
• 1 lime, wedged
• 1 avocado( optional)
• 8 6-inch corn or flour tortillas
Slaw
• 3 cups cabbage, shredded
• 1 / 3 cup cilantro chopped
• 1 / 4 cup mayo
• 1 lime, juiced
• Salt and pepper to taste
DIRECTIONS
Place thawed fish on a parchment lined baking sheet. Pat dry any moisture with a paper towel. Rub the fish with olive oil and sprinkle taco seasoning all over both sides. Top the fish with a squeeze of fresh lime and place into a preheated 400 degree oven.
Bake for 10-14 minutes, depending on thickness of the fish, until it easily flakes with a fork. While the fish is cooking, prepare the slaw by mixing together mayo, lime juice, salt & pepper. Toss with cabbage and cilantro and set aside.
Serve chunks of fish in warmed tortillas topped with slaw, avocado slices and lime wedges.
