Wild Rice Recipes

Classic Creamy Wild Rice Chicken Soup
Ingredients :
1 / 2 cup finely chopped onion 6 tbsp butter 1 / 2 cup flour 1 pkg ( 32 oz ) Progresso Chicken Broth 2 cups cooked wild rice 1 / 2 cup grated carrots 1 cup cooked , cubed Gold ’ n Plump All Natural Boneless , Skinless Split Chicken Breast 3 tbsp slivered almonds 1 / 2 tsp salt 1 cup half & half 2 tbsp dry sherry
Directions : In large saucepan , saute onion in butter . Add flour , stirring until bubbly ; gradually stir in broth . Stir in wild rice , carrots , chicken , almonds and salt ; simmer 5 minutes . Stir in half & half and sherry ; heat through . Makes 6 servings .

Beefy Vegetable Wild Rice Casserole
Ingredients : 1 lb . lean ground beef 1 cup chopped onion 2 tsp dried Italian seasoning 1 tsp salt 1 / 2 tsp pepper 1 pkg ( 16 oz ) Green Giant ® SELECT ® Broccoli , Carrots & cauliflower , thawed and drained 1 can ( 10 3 / 4 oz .) cream of celery soup 1 can ( 8 oz .) tomato sauce 3 cups cooked wild rice 2 cups Fancy Brand ® shredded Mild Cheddar Cheese , divided
Directions : Preheat oven to 350 ° F . In large skillet , brown beef and onion ; drain . Add seasonings , vegetable , soup , tomato sauce , wild rice and 1 1 / 2 cups cheese ; mix lightly . Place in 3-qt casserole ; top with remaining cheese . Cover ; bake 25-30 minutes , until heated through . Uncover ; bake 5 minutes . Makes 6-8 servings .

Wild Rice Pudding
Ingredients : 2 cups wild rice 3 cups skim milk 1 / 2 tsp salt 2 cups heavy cream 3 egg yolks 1 / 2 cup brown sugar 1 / 2 cup white sugar 1 tbsp vanilla or 1 tsp pure vanilla 1 / 4 tsp cinnamon 1 / 4 tsp nutmeg 1 cup long-grained white rice 1 piece lemon peel the width of 1 / 2 ” using a whole lemon
In a baking dish or Dutch oven , place wild rice , skim mild and salt . Cover with aluminum foil . Pork 4 pencil-size holes in the foil and bake at 350F for 1 1 / 2 hours .
Directions : In a bowl , place heavy cream , egg yolks , sugar , vanilla , cinnamon and nutmeg . Whisk well to combine . Add white rice and combine . After wild rice is baked 1 1 / 2 hours , add white rice mixture and lemon peel . With a wooden spoon , combine well . Replace foil top and bake 1 hour . Remove from oven . Sprinkle top with 1 tablespoon granulated sugar mixed with 1 / 4 teaspoon cinnamon . Serve with whipped cream and enjoy .
