Our Favourite Recipies

ROAST VEGE'S

roast vegetable mix

ingredients:

2 x eggplants

1x big sweet potato

10 mushrooms

1 punnet of cherry tomatoes

1 zuchini

salt

pepper

1/4 cup olive oil

3 x garlic cloves

lemon

rosemary to sprinkle

method:

1.CUT UP ALL VEGETABLES INTO SQUARES/EQUAL SIZES AND LAY DOWN IN A LARGE BAKING TRAY.

2.SLICE GARLIC GLOVES AND DISTRIBUTE.

3.SPRINKLE SALT, PEPPER, GARLIC AND ROSEMARY

4.SQUEEZE LEMON AND DRIZZLE OLIVE OIL ON TOP

5. POUR WATER SO IT FILLS 1/2CM OF BASE OF TRAY

6. PLACE IN A 180 OVEN FOR 40 MINUTES THEN TURN DOWN TO 140 FOR ABOUT 1.5HRS. KEEP CHECKING THAT THE VEGIES ARE SOFT.

7. ONCE THEY ARE SOFT TURN ON FAN FORCED FOR 10 MINUTES TO CRISP OUTSIDE

8.REMOVE, LET COOL AND PLACE IN FRIDGE.

Steph makes these every Sunday and uses them all week for sandwiches and salads!

Spending 2 hours on this on a Sunday will remove hours of cooking time during the week!
