ROTEL CHICKEN CHILI
SERVES 8
INGREDIENTS
2 cans Rotel (10 oz)
2 cups water
4 large chicken breasts
3 cups rice
1 can whole pinto beans (16 oz)
4 oz cream cheese
8 oz Velveeta
2 tbsp chili powder
2 tbsp garlic salt
1 tbsp pepper
INSTRUCTIONS
Put chicken, Rotel, seasonings and
water into crock pot and cook on high for 4
hours.
Once cooked take chicken out of crock pot
and shred (Cook rice while doing this)
Cut cream cheese and Velveeta into cubes
and then put into crock pot and whisk until it
makes a sauce.
Add beans and rice
Stir to mix
Add shredded chicken
Cook on low for 1 hour
Serve with tortilla chips (like a dip, because
it’s thick, or just eat with a spoon!)
