Carrot soup with apple flavor
Carrot soup is quite easy to make and
suitable for breakfast or as an appetizer,
providing various vitamins and
necessary nutrients. A cheese and fresh
cream base gives the soup its rich taste;
however, when we add apple and other
seasonal produce to the dish, it becomes
sweeter and makes for a great dish for
autumn weather. You can enjoy the
soup with crispy baked croutoun bread.
Ingredients:
- 100g of carrots, peeled, thinly sliced
- 50g of onions, peeled, thinly sliced
- 20g of apples, peeled, thinly sliced
- 1 laurel leaf
- 100ml vegetable stock
Directions:
Heat olive oil, add sliced carrots, onions
and apples, stir-fry until they are pureed.
Stew the mixture with vegetable stock
and laurel leaf for 30 minutes. Strain,
then heat the extract with fresh cream
and season with a little salt.
