Make It A Great Day!
PASTA WITH HAPPY TOPPINGS
Ingredients:
360 g pasta (Rotini)
400 g salmon, skin-less
60 g red onion
20 grape tomoatoes
20 blueberries
2 tbsp fresh dill
2 tbsp capers
100 g goat cheese
2 slices sour dough bread
Olive oil
Butter
Salt
Freshly ground black pepper
Preparation:
• In a pan bring 1" water to a boil.
• Place the salmon in the pan, cover with a lid and remove from heat.
• Let it poach for 15-20 minutes.
• In a pot bring water with a little salt to a boil and cook the pasta.
• In the meantime, slice red onion paper thin, chop dill finely
• Tear bread in chunks.
• Toast the bread in a little olive oil and butter until golden brown.
Set aside on a paper towel.
• Sautee onions, capers, tomatoes on medium heat for just a minute
in olive oil.
• Remove salmon from pan and break into medium size pieces.
• Drain pasta.
To serve:
• In a serving bowl combine pasta, a few drops of a good olive oil,
onions, tomatoes, capers and mix gently.
• Top with salmon, blueberries and bits of goat cheese and dill.
Arrange croutons around the sides.
• Sprinkle freshly ground pepper all over.
• Enjoy!
