We had a fantastic time at the February Tomah Chamber Banquet at Three Bears Resort in Warrens! We are missing two of our crew in this photo, but we filled up 2 tables. Our Marketing Director, Rachel Oakes, was also chosen to receive the 2018 Ambassador of the Year award. Congratulations, Rachel! We always made it with fresh Raspberries, but this past summer, I made it with Blueberries and Strawberries, offering another delicious version! What we like is that other than the berries, the ingredients are simple and are probably already in your cupboard and fridge. Ingredients: 2 C. Flour 1 C. Sugar ½ Tsp. Salt 1 Egg 1 Tbsp. Baking powder 1 C. Milk 1 Tsp. Vanilla 1 C. Sugar 1/3 C. Butter (room temp) 3 ½ C Fresh Raspberries, or equivalent of Blueberries & Strawberries For Glaze: 1 ½ C. Powdered Sugar 2 Tbsp. Cream or Milk 1 Tsp. Almond Extract (or Vanilla) Directions: Preheat oven to 350 degrees. Stir together dry ingredients of flour, salt and baking powder; set aside. In mixing bowl, mix softened butter and sugar. Add egg; beat 1 minute. Put the vanilla into the milk, and add it alternately with the dry ingredients. Spread cake batter in a greased, floured 13x9x2 inch baking pan. Spread the berries evenly over the top. Bake for 30 to 35 minutes. Cool 5 minutes, mix glaze ingredients, then drizzle over cake. Serve with ice cream if desired. Timberwood Bank employees presented a $500 check to Dave Stutzman, Bertie Dietzman, and Dan Boehm of the Tomah branch of the North American Squirrel Association.
