Pasta Fagiole
This was a favorite dish of my family while I was growing up. It was served year round, but especially when it was cold. It’s a very simple Italian dish made of pasta and beans. But you can add your own creativity and pizazz, with your own spices, adding things like bacon or by making your own sauce from scratch.
Before the various holidays and celebrations, while we spent time visiting, preparing parts of the holiday meals, we would often have a bowl of this pasta. It is simple to make and allowed us to continue chatting or working.
Ingredients:
Olive Oil
Mince (2-3) Garlic Cloves
Chop 1 large carrot
Chop 1-2 celery stalks
Chop 1 small onion (add more if desired)
1 (small size) can - chopped tomatoes
about 1 quart - vegetable/chicken broth
2 cans - cannellini beans (or other small bean)
1 1/4 cup - small pasta
chopped parsley (optional)
Directions:
Heat your olive oil in a large heavy pot or pan. Cook the onion, carrot and celery until they are all soft. When this done, you can add your garlic and cook for about 30 seconds to a minute.
Next, Pour in the broth, and then add the beans and chopped tomatoes. You can cook this for an additional 15-30 minutes.
Lastly, Add the pasta, chopped parsley and seasonings. Cook the pasta until it is tender or to your taste.
