Spiced Tofu Lettuce Wraps

Serving: 4 Lettuce Wraps Total cook time: 15 min.
INGREDIENTS
1 head butter lettuce, washed and leaves separated
12-oz. package of firm tofu, cut into 8 equal finger-sized strips
½ small red onion, thinly sliced 1 green onion, thinly sliced ½ jalapeno pepper, thinly sliced
PREPARATION
1 cup packaged shredded broccoli slaw ½ medium mango, thinly sliced 2 tbsp cilantro leaves 1 tbsp rice wine vinegar 1 tsp Chinese five spice 1 tsp ground black pepper Dash Sriracha hot sauce( optional)
1. Pat tofu dry and season with Chinese five spice. Let set for approximately 30 min., dabbing any moisture around tofu with paper towel.
2. Mix onion, jalapeno and broccoli slaw into a bowl with rice wine vinegar and ground pepper.
3. Heat a large nonstick sauté pan over medium-high heat. Lightly spray with nonstick oil and then add tofu. Sauté until lightly crusted, about 5 min. each side. Hold to serve hot or chilled.
4. Spread onion / jalapeno / slaw mix into butter lettuce.
5. Layer mango and tofu onto slaw mix then garnish with green onion and cilantro leaves. Dot with Sriracha hot sauce if desired.
