Cottage Cakes

Each morning guests enjoy breakfast in the inns light-filled dining room for delicious, hearty, homemade specials. While waking up with Vermont Coffee Company blends and Stash gourmet teas, guests will enjoy a rotating selection of farmhouse classics such as buttermilk pancakes, tomato basil quiche, French toast, homemade granola and our famous Cottage Cakes with warm apricot sauce… we’ve included their famous recipe below.

Cottage cakes have long been an Inn at Manchester specialty and remain a favorite with guests. They’re easy to make and oh so good!

Ingredients:

1 Cup Cottage Cheese

4 Eggs Beaten

4 Tablespoons Melted Butter

1/2 Cup Flour

Directions:

Whisk together the first three ingredients. Fold in the flour. Bake on a pancake griddle using medium-high heat.

Makes approximately 6 five-inch cakes.

Serve with Vermont Maple Syrup and warm apricot jelly.
