NANA Traditional Duck or Goose Soup Recipe We make duck or goose soup the same way we make caribou soup. 1 Cut an entire duck or goose the same way you would cut up a chicken. 2 Place all the pieces in a large pot. 3 Add water (about 2/3 full). 4 Add salt and pepper to taste. 5 Add a chopped onion (1/2 or one onion) – or dried onions. 6 Bring to a boil. 8 Add uncooked rice (about ¼ cup). 9 Add ¼ cup uncooked macaroni. 10 Cook for another 15-30 minutes until rice is done. Options: • Add one cubed, raw potato (with the rice and macaroni). • Add carrots, celery, stewed tomatoes and curry powder. 7 Boil until meat is tender. Recipe and photo courtesy of Joanne Harris.
