Akutuq( Iñupiaq Ice Cream)

Ingredients 12 cups animal fat( caribou or moose) 3 to 4 cups warm de-boned, very dry white meat fish flakes
( siifish, pike, or white fish work well) 3 to 4 cups warm, dry berries( blue, black, cran, or aqpiks) 3 to 4 well-drained cans of mixed fruit 2 cups of warm, soaked, well-drained raisins
Directions Clean the fat, removing blood, hair and any meat. Slice the fat, put into a meat grinder and finely grind 12 cups. Add the fat to a dry pot and slowly cook on medium / low heat until melted. Strain melted fat with a cheesecloth to remove any solids. Move fat to a large mixing bowl – keep the bowl warm by placing a blanket or sheet around it. Once cool enough to touch, stir fat constantly with your hand in one direction clockwise for about 90 minutes – the fat should double in size. Stir in 3 or 4 cups of the fish( fish meat should be prepared before you start stirring the melted fat, by setting the fish in an oven on low heat and turning every few minutes). Stir in berries, mixed fruit, and raisins. Serve immediately on fresh white rolls or pilot bread. To store, put in freezer.

Supporting One Another: Suicide Prevention
At NANA, we care about the well-being of our shareholders and community. Mental health is just as important as physical health, and it’ s okay to ask for help when you need it.
NANA partnered with the Aqqaluk Trust to produce the second edition of the Iñupiatun Dictionary. The project was guided by our Elders who serve on the NANA Regional Elders Council and by the Iñupiaq Language Commission. They seek to retain and restore our language for future generations. They understand that the revitalization of our language is vital to the continuity of our Iñupiat culture and traditions.
