Campfire Recipes continued Cheesy Campfire Potatoes 6 sliced potatoes ¾ cup shredded mozzarella cheese ¼ cup diced onion ¾ cup shredded cheddar cheese 2 Tbl cold margarine salt and pepper to taste ¼ cup parmesan cheese Build a campfire and burn until you have a bed of coals. Rake coals into a flat bed on one side of fire. Cut 2 lengths of foil approx. 18” square, placing one on top of the other for strength. Spray top one with non-stick cooking spray. Spread potatoes on foil leaving plenty of room to fold up later. Scatter the onion over potatoes, slice the margarine over the potatoes, layer the parmesan, cheddar and mozzarella over potatoes, add salt and pepper. Bring opposite edges of foil together and seal. Place the packet directly into the campfire and cook until the potatoes are soft, about 35 minutes. pg 24 · The Hometown Treasure · July ‘12 Ziploc Omelets Start a pot of water boiling over the campfire. Use a 1 qt. size freezer bag per person. Crack 2 eggs into bag and any of your favorite omelet ingredients. Seal bag and drop into pot of boiling water. Cook about 3 minutes. Roll omelet onto a plate, add salt and pepper and enjoy!
