CARROT, THYME AND TOMATO SOUP
WITH GOAT’S CHEESE
Serves 4-6

1 large onion
5 tbsp macadamia nut oil
Fresh carrots 500g
500mls Vegetable stock
500g Tomatoes
200g Goats cheese
1 tbsp Thyme leaves
Sea salt
Black Pepper

Peel the onion, chop then cook until soft in the pan with half of your oil.
Add in your carrots and stir gently for around 10 minutes keeping an eye on them.
Add the stock and cook on a low head for around 20 minutes before adding in the tomatoes.
Keep an eye on them and when they become very soft, begin to mash with a fork and add in
half of your thyme.
Blend until smooth then add in the rest of your thyme, sea salt and pepper.
Plating up, place a small handful of walnuts in your bowl, add in a slice of goats cheese and
then pour your soup around it and serve.
