What I can tell you is, if you’re another beef farmer reading this, this is my position. I’ve tasted them all from native heritage breeds to continentals and continental X dairy. Lincoln Red is most definitely up there in the top echelons. Dean has a herd of between 20-25 pedigree Lincoln Red cows at any one time. They are put to the bull in springtime. ‘We bull our cows rather than AI and have a bull called Wellington that we purchased from pedigree Lincoln Red breeder John Kennedy of North Somercoates near Mablethorpe in Lincolnshire. It’s his first crop of calves this year and they are looking good.’ ‘I’ll sometimes have to buy-in Lincoln Red beef from other breeders in order to keep up with demand in the shop, but I know who to go to and where to buy the quality that our customers are used to. I’ve done my spell as a member of the council on the Lincoln Red Cattle Society and I’m currently on the marketing committee. It’s a fantastic breed to be involved with and has some brilliant people involved like Chris Page of Newport near Brough in the East Riding. Chris is presently the society president and one of the leading showmen with his Foulness herd.’ ‘We were butchering around three beasts per month but during our peak in lockdown that went up closer to four. That automatically meant I had to buy from other Lincoln Red breeders and rearers.’ ‘We like our Lincoln Reds to have a bit of fat on as we know it is a better eating quality that way. We will always trim a bit off if we feel there’s too much.
