In Italy the cows’ milk is used to manufacture mozzarella cheese. “We diversified into water buffalo from milking cows. Our dairy herd ran to just over 100 when we finished and my husband Stephen still misses it. He would milk today if he could. Our sons Robert and Eddie showed cows in the Young Holstein Breeders shows, but it just wasn’t worth our while carrying on milking.” Today the farming operation at Tenter House Farm sees Stephen and Robert working in tandem. Stephen and Catherine’s younger son Eddie plays as prop forward for the professional London Broncos rugby league team. The farm runs to 253 acres with 193 of them owned and is a combination of buffalo, beef cattle and arable crops. “We have a beef herd. We buy-in young calves and bucket-rear them taking through to finishing. We buy from three local farmers with additional purchases from the marts in Selby and Otley. We sell through Bramall’s abattoir.
