‘ We don ’ t have any cattle calving , but I do buy calves out of Ruswarp Mart , usually Limousin or British Blue heifer calves that generally come from the Cooks of Harwood Dale . I buy quality beef cattle , Limmie X heifers from Malton Mart , from excellent producer Chris Beal of Yedingham , at 21 months . We go through two beasts a week in the shop .’
The butcher ’ s shop has proved a phenomenal success on the farm , so much so that Ash decided to close another they had in Scarborough two years ago and centralise his operation .
‘ We have a team of full-time butchers and supply restaurants and hotels in the town , plus we use our produce in the tearoom and for catering at the weddings and functions in the barn . I am the delivery man . I like that interaction and I think it is important in our business relationship that customers understand how much we care that everything we do is about quality of produce and service .’
‘ During last year ’ s first lockdown we lost all our wholesale customers but our butchery was still very busy and we were undertaking home deliveries too . Summer went crazy and the town was rammed . Our wholesale side boomed again and the last lockdown we boomed again with orders up on the lead up to Christmas .’
The Tysons opened their fantastic barn facility for weddings , charity events and all manner of functions five years ago .
‘ That side of our business has proved immensely successful ,’ says Ash . ‘ But obviously that ’ s one area where we have been hit hard since March 2020 . Like everyone else we have lost so much income , but all of our weddings have all moved on to dates in 2021 and 2022 . That ’ s where the Celebs on the Farm series has also helped . That was at least two weeks ’ worth of bookings .’
