When Penistone Market closed, Brindon still wanted to buy the best in quality live meat, so he sourced a variety of breeds and animals from local farmers which he still does today. Traceability is even more important today and you will always know where your fine cuts of meat have come from. Brindon’s family are farmers, and he even has a small-holding with sheep on, so he is fully aware of how much work goes into rearing a quality animal. Two things that really set Brindon apart from many in his dealings with farmers, is that he forges strong relation- ships with farmers and is in a position to influence the farmer in how the animals are reared, which can have huge positive benefits all round as the appearance, texture and flavour of the meat is devel- oped. What really impressed me was that, as we know, meat prices fluctuate quite heavily at times and we know all too well that there are occasions when farmers are forced to sell at a loss just to generate cashflow. Well, Brindon has a policy that he will never buy meat from a farmer at less than cost and then when times are good he hopes and knows that they look after him with their pricing – how good is that! If he can’t get what he wants on his doorstep he will get it from somewhere in Yorkshire. All his butchers, as does Brindon, make sure the very best cuts of meat are made available to customers. Some examples of the quality Brindon has: beef is specially reared by two local farmers – Ken Tinker and Richard Chippendale of Marsden.Ken has supplied them since the shop first opened. The cattle are predominantly bred from an Angus cow and Limousine bull. The Limousine provides excellent conformation, and the Angus provides the supreme marbling and fat cover that is required for tasty and succulent beef. Pork comes from a Colin Percy of York who is also RSPA approved. Their pigs are large White/Landrace/Durox cross, specifically bred for outdoor rearing. They have good fat cover and develop a thicker skin due to the weather, which makes the crackling delicious and the meat extra juicy. Believe me, once you taste outdoor reared pork you won’t visit a supermarket again.
