Using a spatula, cover the top
layer of cake with ganache.
Cut off any cake that may
be overhanging with a bread
knife.
Place your next cake layer on,
and follow this process with
your remaining layers.
Don’t forget to check your
levels!
Once all your layers are
stacked, quickly check for
areas of cake that might be
sticking out over the bottom
cake board. Running your cake
scraper around the cake board
is the best way to do this.
Using the spatula cover
the cake board lined with
Go Between with a good
amount of ganache.
