CHOCOLATE YULE LOG To make this chocolate yule log you will need two basic chocolate truffle mixtures, one made with white chocolate and one made using milk brown chocolate. (Recipe for basic chocolate truffles is in this edition.) Add chopped nuts to the milk brown mixture and pour out onto wax paper or cellophane and allow to cool. When firm pour white mixture over to which you have added dried coconut. Allow the top layer of truffle mixture to set slightly. When firm roll your yule log and allow to firm up in the freezer for 15 minutes When your log has set nice and firm brush it with a thick coating of melted moulding / coating chocolate. Because it is cold when you brush your chocolate on top it will set immediately and give it a rough tree bark appearance. Spoon melted white chocolate down the centre allow for some to run down the sides of your log. Decorate with an assortment of glazed fruit and nuts as well as edible icing decorations. The log can be served as one long piece or cut into smaller chunks. Brush Drizzle Decorate
