! Coconut Chicken Curry Serves  2-­‐4   ! 2  chicken  breasts,  sliced     1  tbsp.  olive  oil     1  white  onion,  diced     2  garlic  cloves,  minced     2  tbsp.  red  curry  paste     1  tsp.  ground  turmeric     1¾  cups  coconut  milk     12  bay  leaves     
 InstrucBons     1.  Heat  ½  tbsp.  of  oil  in  a  wok  or  fry  pan,  add  chicken  and  fry  for  4-­‐5  minutes  or  unBl   golden  brown.  Remove  chicken  from  pan.     2.  Place  remaining  oil  into  the  pan  and  fry  onion  and  garlic  unBl  lightly  browned,  add  red   curry  paste  and  turmeric  and  sBr  for  an  addiBonal  1  minute.  Add  coconut  milk  and  bay   leaves  and  simmer  on  low  heat  for  15  minutes.  Cool  slightly  before  serving.     ! ! !
