Researchers found that diets rich in blueberries significantly improved both the learning capacity and motor skills of aging humans, making them mentally equivalent to much younger ones. So keep up with your kids and make some blueberry chia breakfast pudding! Ingredients (makes 1 & 1/2cup) 2 Tbsp chia seeds 3/4 cup water 1/3 c cashews 1c fresh blueberries 3 dates a pinch of cinnamon Preparation: 1. Soak 2 Tbsp chia seeds in 3/4 cup water for 15mins. 2. Add water, seeds, 1/3c cashews, 1c fresh blueberries, 3 dates and a pinch of cinnamon in a blender and blend until smooth. 3. Eat!
