Why not try this winter warming
recipe?
Serves 4, or divide into portions and freeze for
an easy lunch.
You need:
1 head of broccoli or cauliflower (or a mixture)
500ml/1 pint of vegetable stock
100ml milk
180g crumbled stilton or other blue cheese
(including rind)
Half teaspoon Dijon mustard (optional)
Seasoning to taste
Boil the broccoli in a large saucepan for
10-15 minutes until soft and then drain. Use the
cooking water to make the vegetable stock and
pour over the broccoli.
Add the milk and simmer for a further 5 minutes. Carefully transfer to a blender and blitz
until smooth. Return to the heat and add the
stilton, mustard (if using) and seasoning.
Once the cheese has melted, stir and serve
