Let Food be Your Medicine… We are still in winter, but our bodies are starting to feel the need for more refreshing, less stodgy food, in preparation for spring. I don’t have to tell you how good oranges are and how healthy and vitamin C is always good! Oranges can be found all year round and in Sicily they are also common as main course, but you can have this delicious and refreshing salad as starter or side dish, if you prefer. The preparation is simplicity itself. No cooking and no excuses for not trying! • 6 large navel oranges, peeled and sliced • 1 medium red onion, thinly sliced • 8 fresh basil leaves, thinly sliced • 2 tablespoons olive oil • 1/4 teaspoon coarsely ground pepper On a serving platter, alternately arrange orange and onion slices, with the slices slightly overlapping. Sprinkle with basil. Drizzle with oil and sprinkle with pepper. Enjoy!
