An Evening of Exquisite Pairings
Carmello ' s Wine Dinner was a true feast for the senses , featuring an exquisite fourcourse meal , each dish perfectly paired with a carefully selected wine .
The evening began with the Shrimp Diavolo , its spicy kick balanced by the refreshing notes of Italo Cescon Sauvignon Blanc . The wine ’ s crisp acidity and citrus undertones highlighted the sweetness of the shrimp , creating a harmonious first course .
Next up was the vibrant Tomato Basil Cucumber Panzanella , served with Carmelo dressing . Paired with Fattoria Le Pupille Morellino di Scansano , this course brought out the best in the fresh , earthy flavors of the salad , with the wine ’ s red fruit notes complementing the dish ' s brightness .
The third course featured the showstopping Veal Short Rib Pan Ange , served with creamy polenta and grilled broccolini . This rich and hearty dish was elevated by the bold and complex Castello Monaci Primitivo , whose deep berry flavors and hints of spice perfectly matched the tenderness of the veal and the creamy polenta .
