15-minute shrimp stir-fry
• Begin by boiling a large pot of water, and then turning
off once it boils. Put rice noodles inside boiled water
and let them soften on their own (about 5-7 minutes).
• Roughly chop desired vegetables, in large chunk sizes:
Peppers, carrots, onions, mushrooms are good choices
• In a large skillet over medium-high heat, add 2 Tbsp. of
oil, then veggies, and fry quickly until slightly softened.
Set aside, and in the same pan add the shrimp along
with some diced garlic and stir-fry for 1 minute on
each side. Drain noodles and combine all ingredients
in the same pan, and sprinkle 1 Tbsp. of Tamari or
soya sauce, lemon juice, hot sauce, salt + pepper.
