Simply layer sliced potatoes, then beans in tomato
sauce, zucchini and onions, sprinkle some cheese and
a cup of veggie broth, and bake in 400°F oven for 30
minutes – or until potatoes are soft to pierce through.
No need to overthink this recipe! You can use whichever
beans you prefer (just rinse out well and mix with any
pasta sauce), and whatever veggies you like best: Peppers,
zucchini, and mushrooms work well here!

Throw any leftover rice, veggies, and meat (or not)
in a pan, add some red or green salsa, wrap and bake!

Heat oven to 400°F. Place ‘roti’ or ‘pita’ breads on a
cookie sheet. Skip the sauce, and sprinkle a bit of cheese,
veggies and meats, bake for 8 minutes, rotating pan once.
