Lentil & Veggie Salad
W e love the fact that lentils and legumes in general have numerous health benefits – especially that they
are so rich in fibre they’ll make you feel full and satisfied for longer than any other carb-high meal. This
salad can be enjoyed hot or cold, and it’s great reheated too!
Dried lentils are especially tasty. Simply soak overnight and rinse well before cooking. If you prefer canned,
be sure to drain the juices and rinse well to avoid gas.

SUGGESTED SALAD INGREDIENTS LEMON GARLIC DRESSING
• 1 15 oz. can lentils, drained and rinsed well • 1 lemon
• 2 Tbsp. fresh parsley • ¼ cup olive oil
• 1 large tomato, chopped • 2 cloves garlic, minced
• 1/2 small red onion, sliced • ½ Tbsp dried oregano
• 1/2 red or yellow bell pepper, chopped • ½ tsp salt
• 1 Tbsp. feta cheese (optional) • fresh pepper
Cumin to Relieve Gas – Gas has many causes – poor chewing before
swallowing, slow digestion, consuming too much animal protein or un-rinsed
legumes prior to cooking, lack of water intake, lack of exercise, and more.
When you’re troubled by gas, simply heat up 1 cup of water almost to the
boiling point, then add 1 teaspoon of cumin powder or 1/2 teaspoon of cumin
seeds and mix well. Add a bit of lemon and honey if desired.
