Peanut Butter Zucchini Treats
Healthy, delicious, and a great way to use up all that zucchini!
Ingredients:
• 1 cup grated zucchini
• 1 / 2 cup peanut butter
• 1 / 2 teaspoon cinnamon
• 1 / 2 cup whole wheat flour
Instructions:
1) Preheat oven to 350 degrees. 2) Line a baking sheet with parchment paper or use silicon baking mat.
3) In a large bowl, mix all ingredients one at a time, mixing well after each addition.
4) Knead dough into ball and roll onto a floured surface 1 / 2 inch thick.
5) Cut with the cookie cutter of your choice and place on your prepared baking sheet.
6) Bake for 10- 15 minutes. 7) Cool and refrigerate. Makes 2- 3 dozen.
