Once you ' re happy with the base tier, start on the top tier. I like to also place some of the texture elements to slightly overlap the piped shell border to create a more organic look.

Step 11 The last technique is the piped foliage vines. Start by lightly marking out your vines in the open spaces left on the cake. Gently scrape your cocktail stick along the frosting in a slightly rounded shape to mark out the“ stems”. These act as guide for placement of the leaves.

Using the piping bag fitted with the small round 5 # tip, begin piping the at the top end of the stem creating your small shells and pulling the tails back towards the stem. Continue piping down the stem, one leaf on each side.
Step 13 Once you have finished both tiers, stand back and assess the placement and balance. Add in anymore stems and foliage if needed.
