Use a plastic flexi scraper to remove excess ganache and smooth out the dome part of the cake . The flexi scraper is perfect for shaping ganache to the curve of your domed cake , but you ’ ll need to grip it firmly in your hands due to its flexibility .
Hold the flexi scraper upright to remove excess ganache , then tilt it towards you to a 45- degree angle to smooth the surface . Get down to eye level to check the symmetry of the dome frequently - this will help you spot any uneven areas that need more attention . Don ’ t be afraid to add more ganache if you ’ ve accidentally taken too much off . It may take some time and patience to achieve that even finish .
As you smooth the ganache , make sure that the straight bottom of the cake and the curved dome blend seamlessly where they meet . Use gentle , sweeping motions with your scraper to blend the edges , creating a smooth transition between the two sections .
Once the ganache is smoothed to your satisfaction , let it firm up overnight in a cool and dry place .
