Devayani Pradhan Incredible Indian Food! The North and the South Have you ever heard of a type of food that has a lot of different varieties? Indian food has a different type of food in every state! It even has different ingredients. However the North has similarities and differences with the South. NORTH INDIAN FOOD North Indian food can have many varieties like the South, for example every state has its own variety of food. They all need a variety of ingredients and spices to make all the dishes. Each dish is unique and has a taste of its own. Each ingredient is unique too. There are basic ingredients you need to make dishes. You must have spices to make your dishes flavorful. Some spices used that are often are coriander seeds, cumin seeds, turmeric, saffron, and amchur. Vegetables like ginger, beetroot, chili peppers, garlic, onion, and leafy greens are also essential. Most dishes are vegetarian, so North Indians use   lentils as protein. Some lentils are besan, kala chana, rajma, black-eyed beans and moong. Gobi Manchurian(above) and vegetarian noodles(below) are two examples of indo-chinese food. What do we do with all these ingredients? We make dishes. Like most types of food, Indian food has appetizers, entrees, and desserts. Samosas, rice, tandoori breads (a type of bread made on a special oven) raita (a sauce made of yoghurt and vegetables), and chutneys are some popular appetizers and side dishes. Dishes like tikka (small pieces of vegetables and meat marinated in a spice mixture), saag paneer (saag is a – 22 –
