The first phase involved conducting experiments to determine the combination of
additives, ingredient ratios, and thermal processing methods that would result in a
product that would retain its soft texture for at least two months. The results of
the first phase were then used to determine what products could be developed
using the technology. Base recipes to be used were screened based on consumer
ranking, and were then adapted for thermal processing. Initial prototypes were
presented to disaster victims for feedback, modified, re-presented, and then
finally, tested for safety and quality parameters, as well as consumer liking.
The resulting biko and suman sa lihiya are both wrapped in banana leaves and are
packaged in laminated aluminum pouches prior to thermal processing. The
responses of the disaster victims to the products were mostly positive: they
considered the products as welcome additions to the typical array of disaster
foods they receive.
The technologies and products developed in this research could serve as much
needed improvements to the current relief packages offered to disaster victims.
With further improvements, the product could potentially be exported, not only
as relief goods, but also as high-class Philippine delicacies for a global market.

An inclusive business (IB) model is one that benefits low-income sectors by
including them in a company’s value chain whether as farmers or producers,
buyers, or consumers, sellers or employees (Ghosh & Rajan, 2019). However,
designing business models that provide benefits to resource-poor communities
remains to be a challenge as exemplars of successful cases remain scarce.
This project seeks to understand the relationship between small and large
enterprises, including the challenges and benefits of the partnership. It also aims
