Focus on Humphrey’s Traditional Butchers

Humphrey’s Butchers has been trading
for eight years in Saffron Walden and
the shop is a family run business with
a rich heritage stretching back three
generations in livestock farming.
Humphrey’s have other butchers
shops in Braintree and Bury St
Edmunds and now a new shop has
just been opened in Bishops Stortford.
Humphrey’s has customer service and
traditional butchery at it’s very heart.
Everything about Humphrey’s is built
on traditional values, craftsmanship,
quality and the very best products
available.
Another cornerstone of this business
is traceability, every shop has a chalk
board that will tell you what farm the
beef, lamb and pork comes from.
Paul Humphrey has an absolute
passion for the family business. I met
up with him and he said “I visited and
traded at the markets in many of the
regional market towns. I used to really
enjoy going to Saffron Walden Market
and it was a great place to meet up
with the local farmers, other butchers
and wholesalers. “
Paul continued “We are very, very
traditional butchers, 98% of our meat
is carcass meat and our beef is hung
and dry-aged. This makes all the
difference as it intensifi es the fl avour
and makes the meat tender, sadly very
few people dry-age beef nowadays
due to the time involved and weight
lost in the process - but it’s really
worth it..”
Paul’s wife Jane added “Our beef is
hung for at least 21 days and Pork and
Lamb benefi t from being hung on the
bone as well. We invite our customers to
come into the cold store to see the meat
hanging. We are very enthusiastic about
what we do and the traditional skills we
use, so we also offer butchery classes
where you can learn how to prepare and
cut up meat. The classes offer one to one
tuition and feature a range of meats
and cuts to demonstrate different
techniques and skills.”

As time has past and the
Saffron Walden cattle market
has long since closed,
Humphrey’s source their
produce from a small selection
of local farmers and small
abattoirs in the area. Paul is
always looking for suppliers
with healthy animals reared in
the traditional way.
Paul continued “We love good
food, so our aim is to get the
best ingredients we can lay
our hands on. Our butchers
can prepare specialist cuts,
add homemade stuffi ngs or
aromatic marinades to help
our customers to create a
memorable meal. When in
season we have a full selection
of game, venison, pheasants,
wild rabbit and even goat... our
policy is if you want something
just ask and we will try to get
it for you. The team in Saffron
Walden are Chris Wright, Thomas
Murphy, Nathan Sherlock and Terry
Martin”
Paul concluded “We are very proud
to have a shop in our home town of
Saffron Walden, and I would like to
thank all the customers that have
supported us. If you are not used to

colleagues are all passionate about
what we sell and are very happy to
help and offer advice about cooking
times and different cuts of meat...”
