MOROCCAN BEET SALAD
(makes 4 to 5 servings)
Growing up in Morocco, my mother, a nurse,
prepared us beets in so many different ways
firmly believing the power of the C vitamins
found within them that are not only great for the
elasticity of the skin but also contains minerals
like Potassium, which is essential for nerve and
muscle function. My favorite was the beat salad,
its’ sweet, its savory, its crunchy; its everything
you want in a salad.
Ingredients:
- 1 lb of Beets
- ¼ cup freshly chopped red onions
- 1 Tablespoon of finely chopped cilantro
- 2 Tablespoons of a balsamic vinegar
- ¼ cup of extra virgin olive oil
- Salt and pepper to taste
Place beets in a saucepan, fill with enough water
to cover. Bring to a boil then cook for about 15
minutes, until tender. Drain, peel, and cube. Add
beets to a medium mixing bowl and add the
cilantro, balsamic vinegar, olive oil, salt &pepper.
Cover and place in fridge to cool. The chopped
onions are the last ingredient to go in the salad to
give it that crunchy element. Serve alone in a bowl
or over sliced toasted crostini as bruschetta.
